GERARD VILLARET HORCAJO

IRON CHEF Teppanyaki, Taipei
2020 - 2024 Michelin Guide Recommended Restaurant & evian Partner

At just 34, Chef Gerard Villaret Horcajo brings a deep passion for culinary artistry, viewing cooking not simply as a profession, but as a lifelong calling.

Trained in some of Europe’s top kitchens, he took the helm at Elements, Inspired by Ciel Bleu at The Okura Prestige Bangkok during the pandemic, successfully leading the restaurant to retain its MICHELIN Star in 2023.

Guided by creativity, discipline, and a strong focus on teamwork, he champions a cuisine rooted in French technique with Japanese influences — where seasonality, precision, and constant evolution drive excellence.

“Our culinary identity is defined by the precision of French techniques harmonised with the delicate soul of Japanese influences. Because every flavour on the plate is intentional, the water must be equally refined. evian’s naturally balanced mineral profile and crisp, neutral finish make it the perfect partner. It acts as a gentle palate cleanser between courses, respecting the complexity of the dish rather than competing with it. This allows guests to fully experience every nuanced layer, from the umami of dry-aged fish to the richness of A5 Wagyu or the subtle sweetness of a foie gras preparation. ”
