Originally from northern Spain, Chef José Luis “Chele” González trained in some of the world’s most acclaimed kitchens, including El Bulli, Mugaritz, and El Celler de Can Roca, before making a lasting mark on the Philippine culinary scene.

At Gallery by Chele, he champions “terroir cuisine,” blending local Philippine ingredients with modern techniques and global influences.

In 2025, the restaurant earned both a MICHELIN One Star and a MICHELIN Green Star, while his second concept, Asador Alfonso, also received its first MICHELIN Star—cementing his status as one of the region’s leading chefs.

“So water is one of the essential part of any experience when you sit down at the table, especially in fine dining, water is part of the whole menu. What we are looking for is a water that really embraces and gives more life to the food, the dish and the flavours. A quality mineral water that is natural makes a lot of sense, especially in my restaurant where we want to highlight nature and enhance guests’ experience, and having evian at the table makes me much more comfortable because I know it is the right water that goes with my dishes.”
